Stir it Up: Ackee and Saltfish
Begin your morning with a taste of Jamaica's national breakfast...
Ingredients
1 Can of Ackee, drained
1/2 Ib of boneless saltfish (cod fish)
1/2 cup of olive oil
2 onions diced
2 Sprigs of thyme
1 scotch bonnet pepper
1 large tomato diced
1 bell pepper
2 Scallions
1 teaspoon freshly ground black pepper
The Directions
- Soak the saltfish in cold water for two hours.
- Drain the saltfish and break it up into small pieces.
- Heat the oil in a medium skillet over medium heat.
- Add the onions, scallion, bell peppers and scotch bonnet pepper and cook for five minutes or until the onions are translucent.
- Add the sprigs of thyme and cook for about 30 seconds.
- Stir your ingredients as needed.
- Add the saltfish to the skillet and let let simmer for 5 minutes, stirring as needed.
- Add the ackee to the rest of ingredients and let simmer for another 2 minutes.
- Then add the black pepper.
