Stir it Up: Thai Cashew Chicken Recipe
The Ingredients
- 1 Chicken Breast diced
- 2 Tablespoons of Flour
- 2 Tablespoons of Roasted Cashew Nuts
- 2 Tablespoons of Dried fried chili
- 1 bell peppers diced
- 1 yellow onions diced
- 1 Spring onion diced
- 3 tablespoons of stock or broth
- 1 cup of vegetable oil
- 2 teaspoons of thai chili paste
- 1 tablespoon of oyster sauce
- 1 teaspoon sugar
The Directions
- Heat 2 inch of oil to medium-high in a large frying pan.
- In a bowl lightly coat chicken in the flour, then deep fry the chicken in large frying pan until cooked or turned slightly brow. Then remove from the oil and set aside.
- Over medium-high seat, stir-fry bell peppers and onions.
- Add the chicken broth.
- Then add seasoning - thai chili paste, oyster sauce, sugar. Mix well.
- Add fried chicken, fried dried chili, cashew nuts, spring onions and stir.
- Remove from the heat and serve with jasmine rice.
