Stir it Up: Thai Cashew Chicken Recipe

The Ingredients

  • 1 Chicken Breast diced
  • 2 Tablespoons of Flour
  • 2 Tablespoons of Roasted Cashew Nuts
  • 2 Tablespoons of Dried fried chili 
  • 1 bell peppers diced
  • 1 yellow onions diced
  • 1 Spring onion diced
  • 3 tablespoons of stock or broth
  • 1 cup of vegetable oil
  • 2 teaspoons of thai chili paste
  • 1 tablespoon of oyster sauce
  • 1 teaspoon sugar

The Directions

  • Heat 2 inch of oil to medium-high in a large frying pan.
  • In a bowl lightly coat chicken in the flour, then deep fry the chicken in large frying pan until cooked or turned slightly brow. Then remove from the oil and set aside.
  • Over medium-high seat, stir-fry bell peppers and onions.
  • Add the chicken broth.
  • Then add seasoning - thai chili paste, oyster sauce, sugar. Mix well. 
  • Add fried chicken, fried dried chili, cashew nuts, spring onions and stir. 
  • Remove from the heat and serve with jasmine rice.
